On my Starlink V5 review video, a common question was performance and reliability in weather. Got some thunderstorms in my area this morning, so I now have some data to share to answer that question.
For context, I live in the Midwest, where we get these big thunderstorms. Not just rain clouds, but storm cells with a lot of wind, huge moisture content. These thunderstorm cells produce severe weather in some cases (wind, hail, etc.) in addition to rain downpours.
Storms rolled through from 1AM to around 5AM. During that 4 hour period, my Starlink V5 antenna dropped connection for a total of 30 minutes. This was spread out over several different events, ranging from a few seconds to the longest outage of over 17 minutes.

In comparison, my V4 Performance dish had 40 minutes of outages during that same period.

One thing I did notice was that latency was much better on the V4 Performance. It was still averaging around 20 ms during the storms, while the V5 was higher at around 30 ms average latency.
So, bottom line, the V5 appears to be up to the task of handling rain and severe weather similarly to the V4, and maybe even better, according to my limited amount of data.
I can't speak for performance degradation, as I was not awake to run speed tests during the storm.
